Parfumeur | Ashley Santiago
Mezcal Chocolat by French Cowboy is a gourmand, liqueur-like eau de parfum with a smoky facet, unisex, created by Ashley Santiago. A shot of mezcal meets intense cacao: smoky and sweet, spicy and creamy.
A Parisian house that co-creates each fragrance with a guest
French Cowboy was born in Paris in 2025 from the meeting of two founders: Ashley Santiago, the youngest perfumer at the Paris office of Givaudan, and Adrien Ollat, a former financier. Each creation is co-written with a personality from the current scene, who provides the direction; the juices are made in France, near Arras, and all formulas are vegan. Mezcal Chocolat was born with Mathis Molinié, chef of Restaurant Philippe in Rouen, where he works alongside his father: as a chef, he has pushed the contrast of flavors to the extreme.
An opening of salted lime, red pepper and mezcal
The fragrance starts like a shot of mezcal. The lime oil, enhanced by a salted accord, is sharpened by Somali olibanum, which gives the mezcal its smoky depth. The red pepper brings heat, and an ultra-rare rum extract, as precious as some of the finest irises in perfumery, takes the effect even further.
A heart of cacao absolute
Rather than a synthetic cacao accord, the house bets everything on cacao absolute, the most precious form of the material, used here in unprecedented proportions. Its creamy roundness takes over from the burning opening.
A base of smoky vanilla, Virginian cedar and cypriol
The cacao blends into a bed of wood. The Virginian cedar brings its smoky and milky sweetness, the Indian cypriol oil a dark and earthy aura. The smoky vanilla ties it all together and prolongs the trail.
The house's signature
Two materials that most brands replace with synthetic accords are used here naturally: cacao absolute, in an unusual quantity, and a rare rum extract. Concentrated at 32%, the fragrance rested for four weeks before bottling, the time for maceration and maturation.
For whom, for what occasions?
For those who love dark gourmands, which do not smell like dessert but like a kitchen in full service. It is worn rather in the evening, and finds its best season in autumn and winter.
With Mezcal Chocolat, French Cowboy signs a burning gourmand, where the smoky and the sweet never give way to each other.
