Spicy Fragrances
Spicy fragrances: from fresh bite to enveloping warmth
The spicy family covers a much broader spectrum than the word suggests. At one end, fresh spices such as cardamom, ginger and pepper bring bite and liveliness to the opening. At the other, warm spices such as cinnamon, clove and nutmeg establish a lasting warmth.
Between the two lies saffron, a special case that is neither fresh nor warm but leathery and mineral. Spices are very powerful ingredients: they are measured to the tenth of a percent, and a single one of them can define the identity of an entire composition.
